Spinach and Pear Salad

This salad brings us toward the heartier fair of the holiday season with spinach and pears, but is still fresh and light. And, it’s the perfect accompaniment to a fabulous autumn meal.

Pear Dressing:

1 pear, diced small

2 teaspoons fresh ginger, finely chopped

2 tablespoons rice wine

Juice from ½ a lemon

Fresh cracked black pepper to taste

Salad greens:

1 bunch fresh spinach

½ bunch arugula

Clean and prepare greens for salad. Toss with dressing and serve immediately.

Optional additions: blue cheese, thinly sliced red onion or spicy sweet pecans.
